You can add vanilla, citrus zest, cinnamon, cardamom, or an extra pinch of salt to this gluten-free streusel crust to make it your own. You can also switch up the ½ cup of brown sugar for ⅓ cup of maple syrup, or use non-dairy butter or butter replacement to make it dairy free.
Here's what you need for this gluten-free streusel recipe:

- quick-cooking gluten-free oats, or rolled gluten-free oats, or chopped nuts mixed with gluten-free flour
- gluten-free flour
- butter
You'll need gluten-free oats.
This recipe calls for gluten-free quick cooking rolled oats, but you can also swap in gluten-free rolled oats.
If you want to make this gluten-free streusel recipe without oats:
The best substitutes for gluten-free oats in this streusel recipe are quinoa flakes or buckwheat flakes. Our favorite substitute is half finely chopped or sliced nuts mixed (pecans, walnuts or almonds) with half gluten-free flour blend. You can also use half unsweetened shaved coconut, chopped into small pieces, mixed with half gluten-free flour.
Choosing gluten-free flour for baking:
King Arthur Measure for Measure or Pamela’s Gluten-Free Artisan Blend blend both make light, fluffy gluten-free baked goods. If you're making your own blend, use gum free baking binder instead of xanthan or guar gum for great results that can be easier on your digestive system.

Gluten Free Streusel Topping Recipe
Ingredients
- ½ cup brown sugar firmly packed
- ½ cup quick-cooking gluten-free oats or rolled gluten-free oats, or ¼ cup chopped nuts mixed with ¼ cup gluten-free flour
- ⅓ cup gluten-free flour blend
- 6 tablespoon butter melted (or non-dairy butter substitute)
Instructions
- In a small bowl, combine brown sugar, oats (or oat replacement), and flour.
- Stir in melted butter.
- Add to any gluten free dessert for a delicious crunch.
