Pomegranate Mojito anyone? The colors in this gorgeous cocktail make everything merry and bright – and since it’s packed with the antioxidant power of pomegranate arils + juice, it’s essentially a health drink. You should probably have two.
You really don’t need much beyond ingredients and ambition to mix up this pomegranate mojito. You can use store-bought simple syrup or whip up your own with this recipe – all it takes is sugar + water (or use honey simple syrup if you’re paleo-ish). Then smash up some mint, and add juice, rum + club soda, and you’re off to the races! I like to serve the cocktail in layers because it’s prettier, so I pour in the rum and club soda carefully, but you could stir it all up if you’re into that kind of thing. Cheers!
- 1/2 ounce simple syrup
- 5-6 mint leaves
- 1 ounce pomegranate juice
- 2 ounces white rum
- club soda
- mint and pomegranate arils for garnish
Muddle the syrup and mint in the bottom of a Collins glass. Then add the pomegranate juice and stir to thoroughly combine. Fill the glass with ice, then pour in the rum slowly, and then fill with club soda.
Top with a mint spring and pomegranate arils. Enjoy.
