It is always exciting to find multiple menu items that are gluten free, when did you start offering a gluten free menu?
I noticed a trend since last year, and it is easy with Vietnamese cuisine, so I started to offer a separate GF menu.
All of your food sounds delicious and unique! Have you always been adventurous in the kitchen?
Yes, I wish I could be more adventurous. I love to put together a menu that brings so many flavors and taste that will make guests want to come back for more because they crave it.
It sounds like your sons are following in you footsteps, what is your favorite part of having them working for you?
There are lots of challenges when your family is working for you, I have to be firm and let them know I am the boss. But at the end of the day, seeing how good they are, makes it so much more rewarding.
After a long day, what’s your favorite easy meal?
Salad, sushi and cold buckwheat noodles.

Can’t live without noodle soup and sushi.
Can you give the G-Free home cooks a tip to get restaurant flavor?
Cook recipes that come from raw ingredients, cut down on using cans or jar for flavoring. Use pure food not processed food. I would cook lots of Vietnamese food since it has no wheat, we season with fish sauce and use lots of fresh herbs, garlic & lemongrass. Vietnamese starch is all rice, cassava and taro.
If we opened your refrigerator, what would we find?
Milk, juice, half n half, heavy cream, butter, fruits, dark green vegetables, a few types of salad, green onions, garlic, a few cheeses, bacon, eggs, some meats, condiments such as whole grain mustard, ketchup, mayo, tobacco, yogurt.
If you had to eat the same item from your menu every day, what would you choose?
If I had to eat the same food from my menu every day, I would pick Pho or Sushi.
