- 3 lbs pork roast, cut into 1-1/2″ cubes
- 1/2 medium onion, diced
- 2 garlic cloves, minced
- 1 jar G-Free green enchilada sauce, divided
Put onion and garlic in bottom of crock pot, then add pork. Add 1/2 jar of green sauce. Cover, set crock pot to low and cook all day. Just before serving, add remainder of green sauce and heat through.
Serve over rice, or in tacos, on a salad, any way you choose. Top with grated cheese or sour cream, if desired.
Note: You can start this and cook half the day on higher heat.
