Roasted Whole Beets


1 bunch beets, any color, scrubbed clean and greens trimmed
olive oil
salt and pepper


Set oven to 425 degrees.
In a glass baking dish, oil beets and sprinkle with salt and pepper. Cover tightly with foil. Roast for approx.  45 minutes (until beets are fork tender).
Let the beets cool, then trim and peel.
