Antipasto

Ingredients

2 cans (7 ounces) solid tuna
1 can (6 ounces) G-Free black olives
1 jar (6 ounces) G-Free marinated mushrooms
2 jars (9 ounces) G-Free marinated artichoke hearts (cut up if large, substitute water packed if necessary)
1 jar (6 ounces) G-Free green olives
1 jar (3-1/2 ounces) cocktail onions
6-8 G-Free gerkins, cut into bite size
2 jars (16 ounces) giardiniera, cut up pieces if large
2 Tbsp capers
2 Tbsp olive oil
2 tsp sugar
1 can (16 ounces) tomato sauce

Directions

Drain all cans and jars.  Mix all ingredients together in a large bowl.  Refrigerate overnight, but you may make this several days in advance of serving.  Keeps for 15 – 20 days refrigerated.  Use leftovers in salad.
