Holiday Pomegranate Mojito anyone? The colors in this gorgeous cocktail make everything merry and bright – and since it’s packed with the antioxidant power of pomegranate arils + juice, it’s essentially a health drink. You should probably have two.
You really don’t need much beyond ingredients and ambition to mix up this pomegranate mojito. Use either store-bought simple syrup or whip up your own with this recipe – all it takes is sugar + water (or use honey simple syrup if you’re paleo-ish). Then smash up some mint, and add juice, rum + club soda, and you’re off to the races! I like to serve the cocktail in layers because it’s prettier, so I pour in the rum and club soda carefully, but you could stir it all up if you’re into that kind of thing.
This cocktail is also full of CA Grown goodness, since 100% of U.S. pomegranates are grown in the Golden State (including on my family’s ranch!) which obviously makes it one of my favorites. Cheers!
A note about pomegranates:
The ruby-red kernels found inside pomegranates are called correctly arils, even though they are often marketed as “pomegranate seeds”. The aril contains the pomegranate seed and the juice of the fruit, wrapped in a thin membrane. Arils are actually even healthier than plain juice, because the seed itself contains punicic acid, in addition to all the superpowered-superfruit-goodness in pomegranate juice. You can find them in stores frozen, freeze dried, or fresh – or you can remove them from the whole pomegranate yourself. The seed inside gives arils a slight crunch, so I usually pair them with nuts or something crispy in recipes. Perfect to give cocktails a little pop.

- 1/2 ounce simple syrup
- 5-6 mint leaves
- 1 ounce pomegranate juice
- 2 ounces white rum
- club soda
- mint and pomegranate arils for garnish
- Muddle the syrup and mint in the bottom of a Collins glass. Then add the pomegranate juice and stir to thoroughly combine. Fill the glass with ice, then pour in the rum slowly, and then fill with club soda.
- Top with a mint spring and pomegranate arils. Enjoy.
