My amazing cousin, Beth, works with me at G-Free Foodie - organizing stuff & keeping me upright (that's a job some days!). She & her husband Ryan are starting a new adventure - one some people might think is a little nuts, but people thought going Gluten Free was nuts when I tried it! They'll keep us updated with their progress - I'm lookin' forward to some stories! Hopefully it'll inspire you to get healthy too - or at least provide us all with a daily dose of humor! Tomorrow my husband and I are embarking on a food adventure. It all started about a month ago when my husband, Ryan, was diagnosed with early signs of fatty liver disease. We researched it and found that over ⅓ of Americans actually have fatty liver disease and most are unaware. We found the documentary "Fat Sick, and Nearly Dead" and decided to watch it and we loved it. The movie follows a man named Joe Cross who suffers from a rare medical condition and is tired of being overweight and sick all the time. So Joe decides to take a trip across the United States and go on a juice fast for 60 days, I don't want to give away the ending but it was convicting. The movie really made a huge impact on us both. While the idea of having nothing but juice for 60 days is extremely scary, the idea of healing ourselves through food is very appealing.
Here's a little health rundown on the both of us!! We have both struggled with our weight for years, Ryan is currently taking medication for high blood pressure and acid reflux, then with the fatty liver diagnosis we knew it was time to make a BIG change. I was diagnosed with ulcerative colitis when I was 16 and I suffer from severe migraines. As long as I can remember I have had a permanent stomach ache, I have just gotten used to feeling bad, but not anymore. We bought our juicer, we have box full of recipes and we are on our way to being healthy!!!
Another huge factor for doing this is our children, we have 3 young children and we want to change their futures! We not only want to live to see our great grandchildren we also want our kids to grow up healthily. We only have them for a few years before they can drive themselves through McDonald's and we want to make sure they have the knowledge to make good food choices!!
Each day (or as often as we possibly can) we will keep you updated on the struggles we have had, or the encouragements we have had and we will also record....
