Even after being warmed in the microwave, the consistency is just right. The kiddo enjoys them for breakfast and for snack, and I’ve developed a lunchtime habit of warming two along with a salad topped with my favorite Roasted Red Pepper Vinaigrette, which I always have in the fridge. Since the veggie cakes are only 100 calories and made with clean ingredients, I feel pretty good about what we’re eating too.
