    Have you met Garden Lites? They are the super-cool folks stocking freezers full of super-easy superfoods that kids + adults will love. I got to try a few of their products recently, and quickly became a fan. (Check out my review of their veggie-packed chocolate muffins here.)

    Can I be honest for a moment?* I love quiche and frittata and those baked egg muffins when they are fresh, but after a couple of hours or a stay in the fridge, the consistency changes and I'm not as excited about round 2. Those dishes also take awhile to make, so if I want to whip something up quickly they aren't really an option. **

They're essentially egg muffins stuffed with vegetables and nutrition - and they're delicious.  Even after being warmed in the microwave, the consistency is just right. The kiddo enjoys them for breakfast and for snack, and I've developed a lunchtime habit of warming two along with a salad topped with my favorite Roasted Red Pepper Vinaigrette, which I always have in the fridge.  Since the veggie cakes are only 100 calories and made with clean ingredients, I feel pretty good about what we're eating too.

    Want to score a box of Garden Lites Superfood Veggie Cakes? Head to your local Target, Kroger, Publix, Costco, Walmart or other grocer and search the freezer section for veggie-loaded deliciousness. To find the closest local retailer and to score a coupon, head to Garden Lites’ store locator page and pop in your Zip Code.  You can order by the case online too. Since their products are always formulated with vegetables first, you know you're getting good stuff!

    * I know I can. It's my blog.

    ** here's where I usually eat a spoonful of nut butter while standing.
