    Have you met Garden Lites? They are the super-cool folks stocking freezers full of super-easy superfoods that kids + adults will love. I got to try a few of their products recently, and quickly became a fan. (Check out my review of their veggie-packed chocolate muffins here.)

     

    Can I be honest for a moment?* I love quiche and frittata and those baked egg muffins when they are fresh, but after a couple of hours or a stay in the fridge, the consistency changes and I'm not as excited about round 2. Those dishes also take awhile to make, so if I want to whip something up quickly they aren't really an option. **

They're essentially egg muffins stuffed with vegetables and nutrition - and they're delicious.  Even after being warmed in the microwave, the consistency is just right. The kiddo enjoys them for breakfast and for snack, and I've developed a lunchtime habit of warming two along with a salad topped with my favorite Roasted Red Pepper Vinaigrette, which I always have in the fridge.  Since the veggie cakes are only 100 calories and made with clean ingredients, I feel pretty good about what we're eating too.
