Pecan, Coconut + Honey Granola


  • 2-1/2 cups G-Free Rolled Oats
  • 1/2 cup Coconut Flakes
  • 1 cup Pecan Halves + Pieces
  • 1/4 tsp Sea Salt
  • 4 Tb Honey
  • 1 tsp G-Free Vanilla Extract
  • 3 Tb G- Free Vegetable Oil
  • 1/2 cup Raisins
  • 1/2 cup Dates, chopped


Preheat oven to 300 degrees F.

In a large bowl mix together oats, coconut, pecans and salt. In a separate bowl mix honey, vanilla and oil (oil will stay mostly separated, that’s okay). Add the honey mixture to the oat mixture and stir until evenly coated (you may want to use your hands, with gloves!). Pour the mixture onto a greased baking sheet with sides and spread to cover evenly. Bake for 30 minutes, stir, bake another 5-10 minutes depending on preferred level of toast. In a small bowl mix the raisins and dates. Stir the raisin mixture into cooked granola.

Store in an airtight container. Refrigerate or freeze to extend freshness.
