    Pecan, Coconut + Honey Granola Recipe

    This easy oven-baked granola is so delicious!

    This Pecan, Coconut + Honey Granola recipe is super-easy and so delicious! It's easy to whip together and oven-baked. You'll want to make your own granola all the time!

    The pecans and coconuts give the granola fabulous texture and flavor. Use it as a healthy breakfast, to top yogurt, or to make granola bars!  It's great in these No-Bake Chewy Granola Bars.

    Ingredients

    2-½ cups Gluten-Free Rolled Oats

    ½ cup Coconut Flakes

    1 cup Pecan Halves + Pieces

    ¼ teaspoon Sea Salt

    4 Tb Honey

    1 teaspoon Vanilla Extract

    3 Tb Vegetable Oil or Olive Oil

    ½ cup Raisins

    Directions

    Preheat oven to 300 degrees F.

    In a large bowl mix together oats, coconut, pecans and salt. In a separate bowl mix honey, vanilla and oil (oil will stay mostly separated, that's okay).

    Add the honey mixture to the oat mixture and stir until evenly coated (you may want to use your hands, with gloves!).

    Pour the mixture onto a greased baking sheet with sides and spread to cover evenly. Bake for 30 minutes, stir, bake another 5-10 minutes depending on preferred level of toast.

    Stir the raisins into cooked granola.

     

    Notes

    Store in an airtight container. Refrigerate or freeze to extend freshness.
