    Easy Gluten Free Dinner Rolls

    Ingredients

    1¾ cups Mama’s Almond or Coconut Blend Flour or your favorite GF blend

    2 tsp. baking powder

    ¾ tsp. salt

    1 tsp. xanthan gum

    2 Tbsp. sugar

    1 cup milk

    ¼ cup mayonnaise, not sandwich spread

    Directions

    : Preheat oven to 350°. Lightly spray muffin tin with cooking spray.

    In a mixing bowl, combine flour, baking powder, salt, xanthan gum and sugar.  Mix well.

    Add mayo.  Pour in milk.  Stir by hand until well combined.  Dough will be slightly wet and sticky.

    Using a 2 inch scoop, fill 9-10 muffin cups with batter.  If you don’t have a scoop, spoon batter into each cup about ¾ full.  Smooth out top if needed.

    Bake rolls just above center rack in the oven for 14-16 minutes or until the rolls begin to brown.  Serve warm.
