The beauty of a galette is its rustic nature. They are a simple, self-contained pie, filled with fruit and spices and just about anything else you like. This version pairs tart apples with sweet prunes, cinnamon, and a savory hint of rosemary (it’s subtle here, but you can substitute for thyme if you prefer). It’s humble enough for a weeknight but holds up at any dinner party.
Choosing a crust for your galette:
Your favorite pie crust recipe should work beautifully for this galette recipe. You can use store-bought pastry too. We use our Best Gluten-Free Pie Crust recipe, which has a touch of cream cheese that adds body and flavor to the dough. If you're not quite sure about handling pie dough, or you're in the mood for something a bit easier, a galette may be the answer. First you simply roll the dough in a circle or oval in a piece of parchment. Then add the filling in the center and flip the edges of the dough up around the filling.


The inspiration for this galette recipe is a classic flavor combination.

Layering the filling in a galette:
A key to having a successful galette is piling the filling in the center. When using harder fruits like apples or pears, its often easier and more attractive to fan out the fruit so you can build out the center. It makes for easier slicing too.

Apple & Prune Galette Recipe with Rosemary
Ingredients
- 3 small baking apples about 400g total weight, peeled, cored, and sliced thin
- 1 cup prunes pitted & halved
- 1 ½ teaspoon cinnamon
- ½ teaspoon kosher salt
- ⅓ cup sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon arrowroot
- 2 tablespoon small rosemary sprigs or fresh thyme
- 1 egg yolk lightly beaten
- 1 tablespoon turbinado sugar
- 1 Gluten-Free Pie Crust or your favorite pie crust
Instructions
- Preheat the oven to 375°F (190°C). In a large bowl, combine the sliced apples, halved prunes, cinnamon, salt, and sugar. Toss to combine, then stir in the apple cider vinegar to coat. Sprinkle in the arrow root and toss again to mix evenly and remove any clumps.
- Flour a large piece of parchment paper with a gluten-free flour mix, then roll out the pie crust to about 16 inches (40 cm)–it will crack as you work with it, but the dough is easy to repair and you can patch any gaps with trimmings.
- Arrange the apple slices in a circular pattern in the center of the dough, leaving a 2-inch gap around the edges. Top the apples with the prunes, then pour over the remaining syrup from the bowl. Dot with rosemary sprigs.
- Gently fold the edges of the dough towards the center of the galette, creating small overlaps as you make your way around the pie, and sealing any cracks that form. Brush the egg yolk over the dough, then sprinkle with the turbinado sugar.
- Transfer the parchment paper and galette to a sheet pan, then bake for 40-45 minutes, until the top is golden brown and the dough has firmly set. Serve warm or at room temperature!
