Why do I call this recipe magic? Well, delicious Chocolate Pumpkin Frosting that’s a snap to make, allergy-friendly, and gets the kiddos (and adults) to eat something reasonably healthy that feels decadent seems like magic to me. So that’s what I call it.
I actually used this chocolate pumpkin frosting to top some banana chocolate chip muffins that I made with Enjoy Life’s Muffin Mix. The kiddo and her friends ate them all up, even though I topped the frosting with creepy spiders made with prunes, raisins and toothpicks. The Enjoy Life products are GF, vegan and top-8 allergen free, so both of these recipes are safe for everyone.
Gluten-Free Dairy-Free Chocolate Pumpkin Frosting
Ingredients
- 1 15 oz. can pumpkin
- 3 tablespoon powdered sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 ¼ cups Enjoy Life Chocolate Chips
Instructions
- Heat the pumpkin, sugar, cinnamon and vanilla in a large saucepan over medium heat and cook for 7-10 minutes, stirring often. Remove the mixture from heat and stir in chocolate chips. Continue stirring until all the chips are melted and the frosting is smooth. Allow to cool completely, stirring occasionally. Then top a cake or cupcakes!
