Add almond milk, melted shortening, and vanilla. Stir until just combined.
Spray preheated waffle iron with cooking spray. Pour batter into center of waffle maker {amount varies by iron}.
Close waffle maker and cook until waffles are crispy and golden brown, 3-5 minutes. Repeat with remaining batter.
To make ganache, place chocolate chips and coffee creamer in microwave-safe bowl. Microwave on low in 30-second intervals, stirring until smooth.
To serve waffles, top with scoops of dairy free vanilla ice cream. Drizzle warm ganache over top. Serve immediately.
Notes
Each waffle serves 1-2 people, depending on size. You can split waffles in half before topping with ice cream and ganache.
