Chocolate Fudge Waffle Sundaes

I have never had a chocolate waffle, covered in ice vanilla cream and warm chocolate ganache. Until now. This gluten free vegan Chocolate Fudge Waffle Sundae is just down right HEAVENLY!

Ingredients

Waffles

  • 1 ¾ cups Sarah's gluten free flour blend
  • ½ cup high quality cocoa powder
  • ½ cup cane sugar
  • ¼ cup brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt
  • ¼ cup dairy free mini chocolate chips {such as Enjoy Life}
  • 1 ½ cups So Delicious Dairy Free unsweetened almond milk or coconut milk
  • 4 tablespoons non-hydrogenated shortening melted {such asNutiva}
  • ½ teaspoons pure vanilla extract

Chocolate Ganache Sauce

  • ¾ cup dairy free chocolate chips
  • ¼ cup So Delicious Dairy Free coconut milk coffee creamer
  • 1-2 pints So Delicious Dairy Free cashew milk or coconut milk vanilla ice cream

Instructions

  • Preheat waffle maker, setting it to medium-high heat.
  • Whisk together flour, cocoa powder, sugar, brown sugar, baking powder and salt. Stir in ¼ cup mini chocolate chips. Set aside.
  • Add almond milk, melted shortening, and vanilla. Stir until just combined.
  • Spray preheated waffle iron with cooking spray. Pour batter into center of waffle maker {amount varies by iron}.
  • Close waffle maker and cook until waffles are crispy and golden brown, 3-5 minutes. Repeat with remaining batter.
  • To make ganache, place chocolate chips and coffee creamer in microwave-safe bowl. Microwave on low in 30-second intervals, stirring until smooth.
  • To serve waffles, top with scoops of dairy free vanilla ice cream. Drizzle warm ganache over top. Serve immediately.

Notes

Each waffle serves 1-2 people, depending on size. You can split waffles in half before topping with ice cream and ganache.
