Just marinate the meat with a rub for a few hours, roast in the oven, and done! The spicy apricot sauce is addictive and super-simple too.
Marinate a rack of lamb for at least 4 hours, or overnight.
Remove the lamb from the refrigerator and allow it to come to room temperature.
Preheat the oven to 400 F.
Roast the lamb for 12-15 minutes (for medium-rare) on a lined sheet pan.
Allow the meat to rest for at least 10 minutes before carving into lamb chops.
