Cauliflower in Béchamel

Cauliflower in Béchamel is one of our favorite side dishes, ever. Combine simple ingredients to achieve maximum deliciousness.
This baked cauliflower with white sauce is a crowd pleasing side that is impressive too.

Ingredients

  • 1 head cauliflower cut into 1" segments
  • 4 Tbsp. unsalted butter OR 3.5 tablespoon olive oil
  • 4 Tbsp. Gluten-Free flour blend
  • 1 pint whole milk OR unflavored/unsweetened coconut or almond milk
  • tsp. fresh grated nutmeg
  • tsp. cayenne pepper
  • ¼ cup Gluten-Free breadcrumbs or superfine Gluten-Free cracker crumbs

Instructions

  • Preheat oven to 400 degrees F (205 C).
    While the oven is heating, steam cauliflower until just fork tender, about 10 minutes. Prepare a baking dish with gluten-free cooking spray or butter. (We suggest butter.)
  • Meanwhile, in a heavy bottomed 2-quart (or 2 liter) sauce pan, melt butter and add flour. Stir until it sizzles and is well incorporated, about 2 minutes.
    Add milk and whisk constantly until the mixture thickens, about 7 minutes. Add nutmeg, cayenne, and salt to taste.
  • Mix béchamel with cooked cauliflower. Add to baking dish and top with breadcrumbs.
    Bake 25 minutes or until top is brown and bubbly.
