    What’s Your Damage?: Nuts | April, Anti-Gluten Activist

    While I get a thrill out of sticking my spoon right inside the peanut butter jar, the fact is that nut allergies (peanuts, and those sneaky tree nuts) are out of hand. It’s like our ancestors made a huge mistake when they grabbed those out of trees and pulled them out of the ground. Honestly, my kids don’t have nut allergies but I’m still freaked out if I think I see nuts at a school event or party. Stupid nuts.

    I decided to make something dessert-y for my anti-nut post, and I scoured my repertoire for delicious peanut butter desserts that I could de-nut. I could not decide since everything looked so freaking delicious, so I decided to go super easy yet SUPER fun. I mean, the funnest. Rice Krispie Treats! My co-workerrecently brought in some gluten-free Rice Krispie-like treats which also put me in the mood for more treats. And since I already had my Sunbutter ready when I decided to do this, I just added a little sea salt and melted up the marshmallows!

    Sunbutter is like magic when you’re allergic but craving a nutty dessert. Which is why everyone who has someone with a nut allergy in their family should stock up on the Sunbutter when the allergic wants to substitute instead of simply avoid. In fact, if you have kids in school—allergic or not—you should have a jar of Sunbutter on hand for any bake sales or snack times. Consider it your contribution to the community. In fact, rather than a recipe post this is really a call for us all to grab some alt nuts if we’re around the allergic, and/or school kids. DO IT.

    How did I make these master snacks? Well, if you don’t already know, here’s the scoop:

    Gluten-Free, Nut-Free Rice Krispie’ish Nutty Treats

    (Yes, that is a weird name but I’m going with it.)

    Ingredients:

    6 cups gluten-free Rice Krispie or gf puffed rice cereal
    3 Tablespoons butter
    4 cups mini marshmallows
    ½ cup Sunbutter
    Dash of sea salt

    1. Grease a small rectangular shallow pan.

    2. Melt butter over medium heat in large saucepan, adding marshmallows in and stirring until melted and combined. Remove mixture from heat and add in Sunbutter, sea salt and mix well.

    3. Add gluten-free Rice Krispies one cup at a time, mixing thoroughly. Immediately transfer to greased pan and use parchment paper or cling wrap to press down on top for an even surface. Allow to cool, and then cut into squares.

    Makes: 14 servings
