Ingredients
3 cups gluten free flour blend
2-½ teaspoon xanthan gum
2 teaspoon baking soda
1-½ teaspoon salt
3 cups sugar
1 cup vegetable oil
4 eggs
1 teaspoon nutmeg
1 teaspoon cinnamon
1-½ cups pumpkin (one 15 oz. can)
⅔ cup water
Directions
Preheat oven to 350 degrees. Grease or use non-stick cooking spray on two 5" by 8" loaf pans, set aside. Combine gluten free flour blend, xanthan gum, baking soda, and salt in a bowl and set aside. Combine oil and sugar in a large bowl, mixing well. Add eggs, one at a time, mixing well after each. Add nutmeg, cinnamon, pumpkin, and water, mix together thoroughly. Add gluten free flour mixture, about a cup at a time, mixing well after each addition until all is incorporated. Pour into prepared loaf pans and bake for 75-90 minutes, until toothpick inserted near middle comes out clean.
