    Proscuitto Wrapped Figs with Compound Butter

    Ingredients

    ⅓ lb Gluten Free Prosciutto

    8 Fresh Figs

    1 Tablespoon Brown Sugar

    1 Tablespoon Basil-Lemon Compound Butter (recipe follows)

    For Basil-Lemon Compound Butter:

    2 Sticks Salted Butter, softened

    ½ Cup Finely Chopped Fresh Basil

    ¼ Cup Chopped Fresh Parsley

    Juice from ½ lemon

    Directions

    Wash, dry & slice the figs in half.

    Sprinkle some brown sugar in the open top of each fig, and place a bit of the butter over the sugar. Wrap each fig with a slice of prosciutto, trimming to get a proper fit, and using a wooden toothpick to hold the bacon in place. Place figs on a lined baking sheet and broil, until prosciutto is crisped and browned (about 5 minutes). Keep an eye on them so they don't burn!

    Serve hot.

    To Make Compound Butter:

    Mix the flavoring ingredients with the softened butter, and place in an airtight container or form into a log using wax paper. Cool down in the fridge, and use for cooking or topping grilled meats, fish or veggies.
