Ingredients
1 ¾ Cups boiling water
1 Cup GF rolled oats
½ Cup butter or margarine
1 ¾ Cups sifted featherlight mix(Bette Hagman's) or other all purpose flour mix
½ tsp. xanthan gum
1 Cup brown sugar
1 Cup white sugar
2 eggs
1tsp. baking soda
½ tsp. salt
1 Tbs. cocoa
12 oz. pkg. chocolate chips (I like semi-sweet)
¾ Cup chopped nuts (pecans or walnuts)
Bette Hagman's featherlight mix
1 C. rice flour
1C. cornstarch
1C. tapioca starch
1 Tbs. potato flour
Directions
Pour boiling water over oats and let stand for 10 minutes.
Add sugar and butter, stir.
Add eggs and dry ingredients.
Add half of chocolate chips and half of the nuts to batter.
Pour into a greased 9X13 pan.
Sprinkle remaining nuts and chocolate chips over the top of cake.
Bake 40-50 minutes at 350*
