    Ingredients

    4th of July Flag Fruit Pizza

    Celebrating this 4th of July will be much sweeter when you dazzle your family and friends with this delicious fruit pizza.  Using Mama’s Cookie Mix makes this dessert simple and quick and leaves you with more time for enjoying your family and friends.  Enjoy it all year by adding your fruit of choice including: strawberries, blueberries, melon, grapes, kiwi, huckleberries and more.  Enjoy and Happy Fourth of July to all of my gluten free friends.

    Ingredients:

    1 pkg. Mama’s Cookie Mix

    ¾ cup butter or dairy free margarine

    2 eggs

    Cream Cheese Topping:

    8 oz. cream cheese

    ½ cup powdered sugar

    1 Tbsp. milk

    Fruit: For 4th of July Design use blueberries and strawberries.  For any other design use your favorite fruit.

    Directions

    Preheat oven to 350°.

    In a mixing bowl, cream butter till smooth.  Scrape down sides of bowl.  Add eggs.  Mix well.  Pour half of cookie mix into bowl.  Mix on low speed until combined.  Repeat with remaining cookie mix.

    With lightly floured hands press dough evenly into a 10 x 13 cookie sheet or pan.  If you don’t have a 10 x 13 pan.  You can use half of a baking sheet.

    Bake for 15-16 minutes or until cookie looks cooked all the way through.  Cool completely.  Carefully flip cookie out onto a decorative platter.  You can take a baking sheet and cover with aluminum foil if you don’t have a big enough platter.

    Cream Cheese Topping Directions:  Beat cream cheese on high speed until soft.  Scrape down sides of bowl.   Add powdered sugar and milk.  Beat on high speed for 4-5 minutes.

    Place a pinch of topping and place it on the underside of cookie in each corner to prevent cookie from sliding.  Spread topping evenly over the top of the cookie.  Place blueberries and strawberries on cookie to resemble an American flag.  There should be 50 blueberries, 4 rows of 8 blueberries and 3 rows of 6 blueberries.  There should be 7 stripes made with strawberries.  It helps to place blueberries on first.

    Cookie Ingredients:

    2 cups Mama’s Almond or Coconut Blend Flour

    1 tsp. baking powder

    ½ tsp. salt

    1 tsp. xanthan gum

    ¾ cup butter or dairy free margarine

    1 cup sugar

    2 tsp. G-Free vanilla

    2 eggs

    Directions: Preheat oven to 350°.

    In a medium bowl combine flour, baking powder, salt, and xanthan gum.

    In a mixing bowl cream butter with sugar.  Scrape down sides of bowl.  Add vanilla and eggs.  Mix well.  With mixer running on low speed, slowly pour in flour mixture.  Mix until all flour is combined.
