- 6 eggs, hard boiled and sliced in half lengthwise
- ¼ cup mayonnaise
- 1 teaspoon white vinegar
- 1 teaspoon Gluten Free yellow mustard
- dash of salt
- Freshly ground black pepper
- Smoked paprika
- olive slices, if desired for garnish
Place the egg yolks in a medium sized bowl and mash into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
Fill each egg white with a heaping teaspoon of the yolk mixture, dispersing evenly. Sprinkle paprika over the top of the finished eggs, add an olive slice if desired and store in refrigerator until ready to serve.
