Use this syrup with the berries intact to top pancakes, waffles, ice cream, yogurt and desserts, or strain the Blueberry Maple Syrup for fresh homemade sodas or to add fresh berry flavor to cocktails!
*to make Blueberry Maple Syrup sodas or cocktails: add 1 part syrup to 3 parts club soda or mixers. Yum!
4 cups fresh blueberries
1-2 tbsp lemon juice
2 cups water
1/2 cup maple syrup
Bring the blueberries, lemon juice and water to a simmer and reduce to low, cook for 10-12 minutes, stirring often. Add in the maple syrup and cook for another 3-5 minutes. Allow to cool, then pour into an airtight container and store in the fridge for up to 1 week.
