A trip to the mailbox this week netted me a sample box of Simpli Gluten-Free Instant Apricot Oatmeal. I am not very fond of oatmeal, but we sure do love apricots and it is cold outside. Gluten-free oatmeal is a great way to start off the day with a fiberful punch, so decided to give it a try.
We liked that it is instant and we liked the simple list of ingredients: oats, apricots, salt and sugar. The oats are certified gluten free and are ELISA R5 tested to ensure the oats are free of cross contamination. Their oats are sustainably grown and harvested in fields dedicated to gluten-free oats and they are packaged in facilities used exclusively for oats. This rigorous quality control allows them to deliver the highest quality of gluten-free oat products.

Because the oatmeal is instant there is no need to cook it on the stove, so just boil ⅔ cup of water (we used almond milk), combine, stir, let sit for a minute and consume. The result was really soft oatmeal that was quite creamy and flavorful. The second day we had the oatmeal we added a tablespoon of almond butter to the oatmeal (even more fiber) and really enjoyed how the flavors blended. We usually add honey to oatmeal to add sweetness, but the apricots do a nice job of sweetening/flavoring the oatmeal without overpowering.

Re: Oatmeal I've seen gluten-free oats by Bob's Red Mill. I'm sure you could order them if they're not available. Just thought I'd let you know. As far as replacing the flour, she could try almond and/or rice. My daughter has sensitivities to wheat so I've had to experiment with some of this stuff.See you soon.
