I wish to convert a favorite recipe for fruit cake to gluten free.It contains ginger beer, dried fruit, smixed spice, nutmeg and cinnamon and 2cups Self Raising Flour. I have Orgran self raising flour, but do I need to add xanthum gum to this, and how much.
