Can I be honest for a moment?* I love quiche and frittata and those baked egg muffins when they are fresh, but after a couple of hours or a stay in the fridge, the consistency changes and I'm not as excited about round 2. Enter Garden Lites Superfood Veggie Cakes. They're essentially egg muffins stuffed with vegetables and nutrition - and they're delicious. Even after being warmed in the microwave, the consistency is just right. The kiddo enjoys them for breakfast and for snack, and I've developed a lunchtime habit of warming two along with a salad topped with my favorite Roasted Red Pepper Vinaigrette, which I always have in the fridge. Since the veggie cakes are only 100 calories and made with clean ingredients, I feel pretty good about what we're eating too.
